Cowboy cookies


1 cup butter
2 eggs
1 cup sugar
1 cup brown sugar
2 cups flour
2 cups corn flakes
1 tsp salt
1 tsp vanilla
2 tsp baking soda
2 cups oats
1 cup coconut
1/2 cup chocolate chips
1/2 cup butterscotch chips

Cream Butter, eggs, white and brown sugar, and vanilla. Mix in the rest of the ingredients. Makes 28 2oz cookies.

Bev's Meltaways

1 cup butter
3/4 cup cornstarch
3/4 cup powdered sugar
1 cup flour

Mix together and cook on a greased cookie sheet for 10-12 minutes at 350 degrees.

Frosting
3 oz cream cheese
1 cup powdered sugar
1 tsp vanilla
pink food coloring

Chocolate Chip & Butterscotch Pretzel Cookies

Makes 24 cookies
Ingredients:
  • 1 1/2 cups of all purpose flour
  • 1/2 tsp. of salt
  • 1/4 tsp. of baking soda
  • 1/2 cup of butter at room temperature
  • 1/2 cup of tightly packed light brown sugar
  • 1/3 cup of granulated sugar
  • 1 egg (beaten)
  • 1 tsp vanilla extract
  • 1 cup milk chocolate chips
  • 1/2 cup butterscotch chips
  • 1/2 cup broken up pretzel pieces
  • Kosher Salt 
Directions:
  1. In a medium bowl, sift together the flour, baking soda, and salt. Set aside.
  2. In a larger bowl, beat the butter and sugars together on medium speed until light and fluffy (about 2-3 minutes). On low speed, slowly add the beaten egg and vanilla extract. Beat to combine, scrape down the sides of the bowl.
  3. Add the flour mixture and beat just until there are no more streaks of flour. Stir in the chocolate chips, butterscotch chips, and pretzels.
  4. Preheat the oven to 350F. Line baking sheets with parchment paper. Scoop out well rounded tablespoonfuls of the dough and sprinkle with pretzel salt. Leave about 2 inches between each ball. Bake for 10 minutes. If you prefer crispier cookies increase the baking time by 1-2 minutes. Allow the cookies to cool on the baking sheet for a few minutes before removing.

Allison's Sugar Cookies

1C butter
1C shortening
2C sugar
6 eggs
1T vanilla
7C flour
2t baking soda
1T cream of tarter
1t nutmeg
1/2 t salt

Cream butter, shortening, and sugar; add eggs one at a time then add vanilla, mix together flour, baking soda, cream of tarter, nutmeg, and salt. Bake @ 350 degrees for 12-13min.(cookies sizzle at end.) Make your favorite cream cheese frosting and enjoy!

Homemade Oreo's (Kathryn Ellison)

Cookie
1 box Chocolate Cake Mix or Devils Food Cake
2 eggs
1/2 cup oil
1/4 cup flour

Preheat oven to 350 degrees. Mix all ingredients together and roll into little balls. Bake for 10 minutes. Take out of oven and place cookies on a cooling rack until cookies are completely cooled.

Frosting
2 cups powdered sugar
8oz cream cheese
1 cube of butter (room temperature)

Beat with an electric mixer until fluffy.

To assemble cookies place 1 heaping tablespoon of frosting on one cookie and top with another cookie...just like an oreo!
