Delicious Salmon Sandwiches

Salmon Sandwich

Ciabatta Rolls
The Ciabatta Rolls at Costco are delicious but get them from your favorite bakery if you like.
Cole Slaw
Buy Cole Slaw from the Deli section of your grocery store or, you can make your own with shredded cabbage and Litehouse Cole Slaw dressing which I prefer.
Dill Sauce
IC Mayo
IC Sour Cream
3 scallions chopped
IT Bon Apetite OR Beau Monde Seasoning (Which ever one you can find)
IT Dill Weed
Let the sauce sit for a couple of hours for the flavors to blend
Salmon
I use about 2-3oz of Salmon per sandwich. Season the Salmon with the rub Patricia posted on the blog. You can cook the Salmon however you like, bake it grill it or pan sear it. A really quick way to prepare it is to put it on plate and cover it with plastic wrap and microwave it (2-3oz) for one minute. Then let it sit for a minute or so. It will look like it isn't quite done but don't worry it will be by the time you put it on
sandwich. Remember, with fish, it is better to be a little underdone that over done and dry.
Cut your Ciabatta Rolls in half. Put the dressing one one side of the bun and the Dill Sauce on the other, then lay on the Salmon and flake it to cover the whole area of the bun. Enjoy! Yum!
