Granola

My sister in law Emilee Wells made this for us when we were in Southbend, Indiana. It is so good because it's chewy and doesn't really dry out.

7-8 cups old-fashioned oats
1 cup wheat germ
1 cup whole wheat flour
1/2 cup brown sugar
1 cup canola oil
1 cup honey
1/4 cup water
2 T. vanilla
2 tsp. salt
2 T. cinnamon
1 cup unsweetened coconut (optional)
Also optional: Almonds, pecans, sunflower seeds, or whatever kind of nut you like.

Mix all of the ingredients together (with your hands--do NOT use a Kitchen-Aid) and spread out on two greased cookie sheets. Bake at 325 for 20 minutes. Stir and bake another 15 minutes. Scrape the bottom of cookie sheet as soon as it is done to prevent sticking. Cool and then store in an airtight container.

This granola is delicious the way it is. Lauren made if for me in Texas. I especially loved it on Blue Bell blackberry crumble ice cream, yumm! However I wouldn't be a Hickman if I didn't make a few minor changes to the recipie. I used coconut oil instead of canola and cut the cinnamon in half. When Lauren made it I don't remember the cinnamon so strong but the first time I made it I thought there was too much. It is best over plain greek yogurt with blueberries drizzeled with fresh honey.

Also I have discovered that when I use the honey from Sam's Club, the granola is chewy but when I have used other honey it has turned crunchy. I have not yet tried the honey from Costco so I can't vouch for it.
